Claudette’s opened in 2004 with one griddle, a small dining room, and a stubborn belief that breakfast is the most important meal of the day — so it deserves to be the most carefully made.

Two decades later, the family is still here. The recipes haven’t changed. The regulars still get the usual. And the first pot of coffee still goes on at 6:30 sharp.
